Broccoli, Ham and Cheese Quiche

Ingredients:

  • 16-ounce bag of frozen, shredded hash browns (thawed)
  • 8 eggs, beaten, divided
  • 2 tablespoons all-purpose flour
  • 1 tablespoon extra-virgin olive oil
  • 1/4 teaspoon salt
  • 2 cups finely chopped fresh broccoli florets
  • 1 cup shredded extra-sharp Cheddar cheese
  • 3/4 cup finely diced smoked ham
  • 3/4 cup reduced-fat sour cream
  • 1/4 cup minced fresh chives
  • 1/8 teaspoon freshly ground pepper

 

Directions:

  1. Preheat oven to 375°F.
  2. Prepare a 9-inch springform pan with cooking spray.
  3. Place pan on a baking sheet (to catch any spills while cooking).
  4. For the crust, in a large bowl, toss the shredded hash browns with 1/4 cup of the beaten egg mixture, flour, oil and salt, stirring to combine.
  5. Put the mixture into the springform pan, covering the bottom and sides.
  6. Place in the oven and bake for 30 minutes, or until potatoes are starting to brown.
  7. Remove pan from the oven and add the chopped broccoli, shredded cheese and diced ham.
  8. In a medium-sized bowl, beat the remaining eggs, sour cream, chives and pepper until well mixed.
  9. Place the egg mixture into the springform pan and place in oven to bake for 1 hour, until the center is set.
  10. Let cool and serve.
